Tarragon Mustard

Orange

Sugar, Soft Brown
4 oz
125 g
Tarragon, fresh chopped
1 tbsp
Brandy
1 tbsp

Method

  1. Soak the mustard seeds in cold water overnight
  2. Next day, drain well
  3. Grate the zest of the oranges and squeeze the juice. Put together in a pan and bring to the boil.
  4. Reduce to a simmer, remove from heat, cool.
  5. Add all other ingredients and then process in a goblet shaped liquidiser to desired texture.
  6. Pot into warm jars and seal. Leave for one week before using.
