Tarragon Mustard

Vinegar, White Wine
4 fl oz
125 ml
Sea Salt
2 tsp
Sugar, Soft Brown
4 oz
125 g
Tarragon, fresh chopped
1 tbsp
1 tbsp


Soak the mustard seeds in cold water overnight Next day, drain well Grate the zest of the oranges and squeeze the juice. Put together in a pan and bring to the boil. Reduce to a simmer, remove from heat, cool. Add all other ingredients and then process in a goblet shaped liquidiser to desired texture. Pot into warm jars and seal. Leave for one week before using.
