Orange Spiced Mustard

This mustard is most delicious with steak - or duck, really, really good

Ingredients

16 fl oz
500 ml
Black Peppercorns,
Whole
2 tsp
Paprika
2 tsp
Turmeric
4 tsp
Sugar, Soft Brown
6 oz
170 g
Cinnamon, Ground
1 pinch
Allspice Berries, whole
2 tsp
Orange, Zest and Juice,
Large, zest and juice

Method

  1. Mix first three ingredients and leave to soak overnight.
  2. Add remaining ingredients and mix well.
  3. Pour into a goblet processor/liquidiser and process in short bursts until desired consistency is reached. Be careful not to overheat the motor.
  4. Pack into warmed jars, ensuring air bubbles are cleared using the end of a dinner knife or similar.
  5. Seal tightly and keep for at least two weeks to mature.
  6. Stunning with steak.
