Maraschino Cherries

Nothing like the bright red sticky cherries found in cocktails - these are deep, dark and dangerous!

Maraschino Liqueur
9 fl oz
250 ml
Black Cherries
600 g
Caster Sugar
4 oz
115 g
4 fl oz
100 ml
Juice of Lemon
2 tsp
Nutmeg , Freshly grated
1 pinch
Vanilla Extract
1 tsp
Cinnamon Stick
1 each

Wash the cherries and leave stalks on wherever possible. ( These look attractive on top of a trilfe, for instance.) Leave stones in. Once the cherries are prepared, put all of the remaining ingredients except the liqueur and cherries, into a pan and stir to combine. Heat and bring to a rolling boil.Reduce the heat, add the cherries and simmer for around 5 mins. Remove from the heat, allow to cool a little and then add the liqueur. We used Luxardo, bought on-line, but you could substitute brandy. Delicious on their own as a sweetmeat after a meal, or on a trifle or in cocktails
