Lemon or Lime Cordial

So easy to make, citrus cordials are absolutely unlike anything commercially produced

Ingredients

Sugar, White granulated

Method

  1. Grate the zest from the lemons and squeeze the juice.
  2. Combine in a pan with the sugar, water, and citric acid, stirring to dissolve the sugar.
  3. Cover with a cloth or cling film and leave overnight. Strain through a fine sieve and pour into sterilised bottles.
  4. Limes can be used instead of lemons.
  5. Cordial will keep for several weeks in the refrigerator or extend the shelf life to a year by sterilising the filled bottles in a waterbath. Cordial will not then need to be refrigerated until opened.
  6. Line the base of a pan with a folded J Cloth, tea towel or newspaper, to prevent the bottles from clattering on the bottom of the pan
  7. Fill the bottles leaving a small gap at the top and the caps placed on loosely
  8. Stand them in the pan and pour in water until just below the tops of the bottles. Turn on the heat and simmer slowly. Once they have reached this point, time them and process at a slow simmer for 20 minutes.
  9. The cordial will rise up in the bottle and push out the air.Remove the bottles carefully from the pan and tighten down the caps. As the cordial cools, it will sink back down the bottle and leave a vacuum at the top where no bugs can grow.

Keep in the fridge and use within 2-3 weeks or sterilise filled bottles in a waterbath to extend to one year without refrigeration
