Herb Salt

One of the best things you can ever make to bring instant flavour to everyday cooking

Herbs,
Fresh, mixed or single, finely chopped

Enter the quantity of one or more of the ingredients that you have and Rosie will adjust the quantities to match.

Method

  1. Prepare your jars - or keep in one large one
  2. Pick over the herbs and discard any scraggy leaves, and the tough stalks
  3. Roughly chop the herbs with scissors into a bowl and combine with the salt
  4. Using a food processor or liquidiser goblet, process the mixture in small batches until well blended
  5. Stir the batches together to unify and remove any larger leaves that have escaped the blades
  6. Line a couple of tea trays or baking trays with silicon or greaseproof paper and spread the salt out roughly evenly over the paper
  7. Leave to dry off the excess moisture overnight and then jar up and label
  8. Makes a great gift
  9. Try making single variety flavours or mixtures with garlic and/or lemon or orange zest
