Method

Prepare your jars - or keep in one large one

Roughly chop the herbs with scissors into a bowl and combine with the salt
Using a food processor or liquidiser goblet, process the mixture in small batches until well blended

Stir the batches together to unify and remove any larger leaves that have escaped the blades
Line a couple of tea trays or baking trays with silicon or greaseproof paper and spread the salt out roughly evenly over the paper
