Fruit Cordials

Fruit cordials are really easy to make and you will never go back to shop bought again - great for children or grandchildren - they love them!

Ingredients

Blackcurrants,
Stripped from stalks
1lb
450 g
Sugar, White granulated
1 each

Method

  1. Recipe can be made with any soft fruit - raspberries, strawberries, blackberries etc - or a mixture
  2. Cook the fruit gently in a preserving pan, with a very little water to prevent sticking
  3. Simmer gently until soft and the juices flow - around 5-10 minutes
  4. Strain through a muslin-lined sieve or jelly bag into a measuring jug
  5. Measure the juice and add 350g/12oz sugar to each 600ml/1 pint juice
  6. Return juice and sugar to pan, add the citric acid and stir over very low heat to dissolve the sugar
  7. Pour syrup into warm sterilised bottles and seal tightly
  8. Use as fruit drink, on ice cream, or in milk shakes
  9. It has an intense flavour quite unlike its commercial counterpart!
