How to make Cranberry Relish | Rosie Makes Jam Recipes

Cranberry Relish

This has a well rounded fruity flavour - nothing acidic about it

Ingredients

Orange
1 each
Cranberries
1lb
600 g
Sugar, White granulated
8 oz
250 g
Pears,
Peeled, cored and sliced

Method

  1. Pare the rind from the orange in long strips, the shred finely across the width
  2. Place in a pan with the cranberries, sugar and pears
  3. Squeeze the juice from the orange into a measuring jug and make up to 300ml or half a pint with the vinegar
  4. Add to the pan with the salt
  5. Heat gently, stirring until the sugar is dissolved, then simmer for 10-15 mins until the fruit is just tender
  6. Pour into hot sterilised jars and seal
  7. Keeps for up to six months - makes a great gift!
