Clove Mustard

The cloves are ground with the mustard seeds to make a warm, intense, aromatic mustard

Ingredients

Sugar, Soft Brown
2 oz
50 g
Black Peppercorns,
Whole
1 tsp
Turmeric
1 tsp

Method

  1. Place the mustard seeds, sugar, salt, peppercorns, cloves and turmeric in a blender or food processor and blend evenly
  2. Gradually add the vinegar, 15ml/1 tbsp at a time, blending well between each addition
  3. Then continue blending until you have a coarse paste
  4. Leave to stand for 10-15 mins to thicken slightly then spoon into warm jars and seal
  5. Ensure there are no air pockets by pressing down with the back of a teaspoon or a round ended knife
  6. Allow to mature for 2 weeks before using
