Apple, Sage and Cider Sauce

This sauce is absolutely delicious - make some!

Ingredients

Olive Oil
4 tbsp
20 ml
Onions (medium),
Peeled and chopped
2 each
Apples, Cooking
3lb
1.5 kg
Sugar, White granulated
5 oz
150 g
Sage Leaves, fresh
20 each
Cider, any flavour
12 fl oz
375 ml
Butter,
Salted or unsalted, cut into small cubes

Method

  1. Peel and chop the apples and onions
  2. Put the butter and oil together in a large pan, cook the onion until soft and translucent and then add the apples.
  3. Cook for 5 minutes, add the cider, sugar and sage leaves and cook until the apples are really soft.
  4. Either sieve the contents of the pan or use a food processor, blending until smooth.
  5. Bottle into warm sterilised bottles. Use within 2 months or sterilise by the waterbath method to increase shelf life to one year.
  6. Great with rich meats.
